Nancie Herbold, EdD, RD-Professor And Chair Nutrition Department, Professor and Chair Nutrition Department Simmons College, Massachusetts

Dr. Herbold is Professor of Nutrition and Chair of the department at Simmons College.  She is also the co-director of the Simmons Center for Hygiene and Health in Home and Community and teaches Advanced Community Nutrition, and the graduate Nutrition Research sequence.

Dr. Herbold is a registered dietitian and has worked in hospitals and as a consultant to home health agencies, corporations and individuals. She is a member of the Massachusetts Nutrition Board, a former president of the Massachusetts Dietetic Association, a two term delegate of the American Dietetic Association, and has completed a fellowship in Adolescent Nutrition at Boston's Children’s Hospital.   Currently, Dr. Herbold is working on a research project examining the hygienic formula feeding practices of parents and child care providers of infants. Dr. Herbold recently completed a study on vitamin/mineral supplements and herbal and botanical use by adolescents. She has published numerous articles in such journals as: Journal of the American Dietetic Association, Journal of Nutrition Education and Behavior, Nutrition Reviews, Nutrition Research, Current Issues in Pediatrics and co-authored a nutrition text Nutrition in Clinical Care.

Dr. Edelstein's present position is as Associate Professor in the Nutrition and Dietetics Department at Simmons College. She presently teaches both Food Science and Food service classes.  Before coming to Simmons College, Dr. Edelstein has previously been in private practice and has served as a hospital Food Service Director and Chief Dietitian.
